This egg tortilla has bits of super crispy bacon and avocado cubes, to give it a special touch. It also has mozzarella cheese. This preparation can serve for about 4 diners, since it is usually quite profitable.
6 large eggs
1/4 cup milk
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated mozzarella cheese
6 slices of bacon cooked and chopped
1 avocado, peeled and diced
Preparation of the egg tortilla with bacon and avocado
Preheat the oven to 250ºC and then grease a rectangular tray with butter.
In a medium bowl add eggs, milk, salt and pepper. Beat manually with the help of a fork, stop when well integrated. Already having this mixture add the Parmesan cheese, the avocado and the bacon, mixing in a soft and wraparound way.
Pour the egg mixture into the pan and place it inside the oven until it is completely set.
Let cool for 5 minutes, cut a section and transfer to a dish.
