Ingredients for 4 people
1 whole chicken of about 1,800 g,
1 lemon, 1 onion,
Aromatic herbs (I used basil, thyme and fresh rosemary), lard, potatoes, salt
How to make baked chicken with thin herbs
Once the chicken is cleaned and the nibs are removed, we pepper it on the inside and put it on the inside half an onion and a half lemon, and a good branch of each of the fresh herbs, so that the chicken is scented while it is roasting.
On the other hand, we prepared a «bed» with potatoes cut into thick slices and onion cut into julienne, arranged on a baking sheet. On the potatoes we also distributed some aromatic herbs to increase their presence.
On that bed we put the chicken, smearing its exterior with lard of pig to obtain a flavor and a spectacular color. Above we put some thyme and rosemary leaves and put it in the preheated oven.
Bake for 80 minutes, at a temperature of 190º, turning the chicken every 20 minutes to brown it all over. At the end, gratin for 5 minutes to give that nice final color to the plate. When turning the chicken, we remove the potatoes so that they are also done everywhere.
