Cauliflower puree with parmesan and chives is a delicious and healthy alternative, you will not feel guilty serving two or three times because it is low in calories. The result is a smooth, creamy purée, very similar to mashed potatoes. In addition, it is an excellent garnish to accompany a plate of white meat. Cheer up and salt the typical mashed potatoes:
Cauliflower puree with parmesan and chives
2 small heads of cauliflower, with roots and leaves removed and cut into small florets
2 cups chicken broth
¼ cup grated Parmesan cheese
¼ cup chopped fresh chives
Salt and black pepper, to taste
In a medium saucepan, combine the cauliflower and the chicken broth and bring to a boil. Reduce heat to low, cover with a lid, and cook for 15 to 20 minutes or until the cauliflower is tender, but without crumbling.
Use a slotted spoon to transfer the cauliflower to a food processor and mix until obtaining a creamy and smooth puree. Transfer to a bowl and stir together with parmesan cheese and chives, season with salt and black pepper. Serve hot and enjoy.
