Prepare this cheesecake without oven

This rich cheesecake recipe does not require an oven since it is frozen. It looks great decorated with raspberries and accompanied by strawberry jam.

Ingredients

250 grams of marinated biscuit Mary
130 grams unsalted butter
2 tablespoons of sugar
2 packets of cream cheese at room temperature
1 1/4 cups condensed milk
1/4 cup lemon juice
1 teaspoon vanilla extract
3 envelopes of hydrated grenetina (7g each)

Preparation

Grease the cake pan with butter.
For the mass of the cake, crush the Mary cookies until they are like powder; Melt the butter in the microwave or in a pot and add the cookies. Add two tablespoons of sugar and mix until blended. Place the previous mixture in the cake pan by pressing to form the base and freeze for 10 minutes.

For the filling, beat the cream cheese with an electric mixer at medium speed until smooth; Add the condensed milk little by little, lemon juice, vanilla and grenetina to integrate.

Pour the filling onto the base of cookies and flatten the surface with a spatula. Freezes for 2 hours.  Garnish with raspberries in a circle and refrigerate for half an hour.  Serves cold.
